Affordable Trophies Podcast special The 2012 Kentucky Derby has been uploaded! This blog entry will serve as the show notes for this episode.

Regina and Ryan discuss the rich history and traditions of the Kentucky Derby.

Mint Julep Recipe:

  • 3 oz Bourbon whiskey
  • 4 to 6 sprigs mint leaves
  • granulated sugar to taste

Put mint, sugar and a small amount of bourbon into the bottom of a mixing glass. gently muddle the mint and sugar, then let stand for a bit to allow the muddled leaves to release their flavor. Strain and pour into a julep cup or similar vessel, rotating to coat the sides. fill with ice, then add the rest of the bourbon whiskey. Garnish with a lightly slapped small mint sprig.

Kentucky Burgoo Recipe (makes a lot; can half recipe):

  • 3 tablespoons vegetable oil
  • 3-4 pounds pork shoulder or country ribs, cut into large pieces 3-4inches wide
  • 2-3 pounds of chuck roast or stew meat cut into 3-4 inch wide pieces
  • 3-5 chicken legs or thighs (bone in)
  • 1 green paper, chopped
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery, chopped
  • 5 garlic cloves, chopped
  • 1 quart chicken stock or broth
  • 1 quart beef stock or broth
  • 1 28 oz can of crushed tomatoes
  • 2 large potatoes (russets)
  • 1 bag of frozen corn (about a pound)
  • 1 bag of frozen lima beans (14 oz)
  • salt and peper
  • 4-8 tablespoons worcestershire sauce
  • tabasco or other hot sauce on the side

1. Heat vegetable oil on med-high heat (8quart size) soup pot. salt the meat well on all sides. brown all meat, when done remove to bowl.

2 Add onions, carrots celery and green paper to the pot (use same pot) add a little more oil if necessary.

3. When vegetables are brown add garlic and cook 30 sec. add back the meat, and the chicken and beef broth, and tomatoes stir to combine. bring to simmer – for 2 hours.

4. Uncover and remove the meat pieces. stip the chicken off the bone and discard skin. break larger pieces of meat into smaller more manageable pieces. this is done because meat stays juicer when the cook in larger pieces. return all the meat pieces to the pot and bring it up to a strong simmer.

5. Peel and cut the potatoes into chunks. add them to the stew and cook then until they are done about 45 min. add worcestershire sauce, mix well and taste for salt.

6. Add the corn and lima beans mix well and cook for at least 10 min.

Serve with mash potatoes. serves 12-16

We used all boneless meat – browned and put everything in a slow cooker – worked very well.
